All my favorite easy, healthy, vegetarian Mexican recipes for Cinco de Mayo or any day!
Cinco de Mayo is just around the corner. I can't believe it's almost May! It feels like summer will be here in no time. I've been busy volunteering at my kids' school, preparing our summer veggie garden, and taking care of our new baby chickens. But I couldn't pass up a chance to celebrate one of my favorite cuisines... Mexican! I feel so lucky to live in a place with a strong Mexican influence and pretty amazing Mexican food. When I was in Italy for several months, a big delicious burrito with guac was one of the things I missed most. As much as I love our Mexican restaurants, I love making it at home just as much. Mexican food is inexpensive (think beans and rice) to make, almost everyone loves it, and it can be very nutritious.
Here are some of my favorite healthier Mexican recipes for your Cinco de Mayo fiesta or any day! From my favorite skinny margarita to hearty salads and enchilada bakes, I hope you find something new to try.
