I've had so much fun thinking of Valentine's Day treats this week. And, well, I got on a roll with it. After I posted about healthy Valentine's Day treats for kids earlier in the week I had another idea. Little pretty pink popsicles. Lucky for us, our school teachers will not be accepting candy, cupcakes, or the like while kids hand out their valentines on Tuesday. One of our teachers has asked for parents to bring in healthy snacks and treats. I'll be bringing these ombre ice pops. I made a couple of small batches for my family and they were gobbled up after dinner and got rave reviews. If you're brining popsicles to school, you can often leave them in the teachers' lounge freezer and let your teacher they are there.
I used nondairy yogurt, so these pops are an excellent allergy friendly option. They are a little sweet, a little tart, creamy, refreshing, and easy to make. They've got vitamin-C and antioxidants to keep those winter cold bugs at bay. I'll definitely be making these more often. All you need for this recipe is three simple ingredients. You won't find any food dyes here, just beautiful natural color. I added orange juice to half of the layers and I was so glad I did. It added the most deliciously bright flavor.
I know the layering can seem daunting and like too much work, but I think the result is so fun. When I've made layered popsicles in the past, I've let each layer freeze completely before adding the next. Here though, I was okay with some blending of the colors to achieve that beautiful ombre effect. I usually make these ombre layered pops while I'm doing housework or cleaning up the kitchen at the end of the day. This recipe makes about 6 medium-small paper cup sized pops but you could always double, triple, etc. for a party.
You can make these fruity yogurt pops in any popsicle mold you have. Or, if you're making them in bulk, you can use Dixie cups and popsicle sticks like I did. My kids (and I!) loved eating these creamy homemade ice pops, but they would be a fun recipe for kids to help make too.
Ombre Berry Orange Yogurt Ice Pops
Published 02/09/2017
Beautiful pink layered ombre yogurt ice pops are a delicious vegan treat for kids of all ages.
Ingredients
- 2 cups favorite vanilla yogurt (I used SoDelicious coconut yogurt)
- 1 cup frozen raspberries
- 1 orange (I used a blood orange)
Instructions
- Fill the bottoms of popsicle molds or 6 paper cups with about 1 tablespoon of yogurt. Place in a tray (I used a loaf pan) and place in the freezer.
- Place the rest of the yogurt in a blender. Add 1/4 cup raspberries and blend. Spoon about 1 1/2 tablespoons of the light pink raspberry yogurt on top of the white yogurt in each of the cups. Cover the pan and cups tightly with plastic wrap. Stick a popsicle stick through the plastic into each cup. Freeze 40 minutes or until the sticks can stand up on their own without plastic.
- Meanwhile, add another 1/4 cup of raspberries and the juice of 1/2 the orange to the blender. Blend. Pour just over 1/2 this medium pink mixture into a glass. Add the rest of the raspberries (1/2 cup) to the blender and blend. Pour into another glass and place in the refrigerator until the first two layers (yogurt and light pink) have set enough to remove the plastic.
- Remove the plastic and pour the medium pink mixture over the light pink in each cup. Freeze 30 minutes or until just firm enough to add the final layer. Pour the bright pink into each cup. Freeze completely. Peel paper cups off the pops and serve!
